Studi Deskriptif Kondisi Hygiene dan Sanitasi Kantin di Universitas Esa Unggul
Abstract
Canteen sanitation problems are closely related to the spread of environmental-based infectious diseases. The purpose of this study was to assess the hygiene and sanitation conditions of the canteen at Universitas Esa Unggul. This research is a descriptive study using a cross-sectional study design with sample selection using a total sampling technique. The number of samples in this study were 16 canteens with details of 12 canteens on the Kebun Jeruk campus and 4 canteens on the Harapan Indah campus. Data collection was done by interview and observation with canteen owners. The results of this study found that the source of clean water used for cooking mostly used refilled water as many as 10 canteens (75%). Meanwhile, the source of clean
water used to wash food raw materials mostly comes from tap water from the Esa Unggul University 10 canteen (75%). The distribution of canteens that received education about Canteen Hygiene and Sanitation were 8 canteens (50%). The distribution of cooking locations is mostly done in the canteen as many as 10 canteens (62.5%). The highest distribution of sanitation for cooking and eating utensils was bad as many as 13 canteens (81.3%). The distribution of personal hygiene for chefs is known to be the worst in 10 canteens (62.5%) and the distribution of personal hygiene for food service providers is known to be the worst in 10 canteens (62.5%). Suggestions for improving the hygiene and sanitation of canteens are to educate on
hygiene and sanitation to canteen owners so that they can improve hygiene and sanitation of equipment and food handlers.
